Elk and deer meat is not only tasty, but is lower in fat, cholesterol, and calories than "traditional" red meats. For this reason, the demand for elk meat and venison is increasing among health conscious consumers. Elk meat and venison consumption in the United States has more than doubled since 1992.

Elk and deer meat is commonly sold in farmers markets and restaurants across Kansas.
